A savoury minced beef filling topped with buttery mashed potato and baked until bubbling and golden.

Instructions

Put the potatoes in a large pan of salted water. Bring to a boil and cook for 15-20 minutes, until tender.
Meanwhile, heat the oil in a large frying pan over medium-high heat. Brown the beef well, breaking it up as it cooks. Drain excess fat if needed.
Add the onions and carrots. Cook for 8-10 minutes, until softened.
Stir in the tomato paste and flour. Cook for 1 minute, then gradually stir in the broth.
Add the Worcestershire sauce and thyme. Simmer for 20-25 minutes, stirring occasionally, until thick. Season to taste.
Drain the potatoes well. Mash with the butter and milk, then season with salt and pepper.
Heat the oven to 200°C/400°F. Spoon the beef filling into a baking dish and spread the mash evenly over the top.
Bake for 25-30 minutes, until bubbling at the edges and golden on top. Rest for 10 minutes before serving.

Notes

Cottage pie is made with beef. The same recipe made with lamb is shepherd's pie.
Frozen peas can be stirred into the filling for the final 5 minutes of simmering.
For a crisp top, roughen the mash with a fork before baking.
